Finely shred in a food processor, 300g raw white cabbage, 200g raw red cabbage, 6 radishes, small red onion, 2-3 sticks of celery, ½ courgette ribbons done with a potato peeler. It all needs to be fine so as you can enjoy the texture of it. Nothing worse than big triangles of raw white cabbage to chew on.
There is a lot of fibre contained in this recipe as well as the wonderful nutrients. If you have any problems with raw cabbage you could parboil the cabbage for a couple of minutes, cool in ice cold water, then add it.
I’ve also included an idea with salmon and asparagus that you could potentially have it along with the slaw.
